Bonito is the finest tuna in Spain. Conserved in olive oil, this meat is soft, juicy, and has the right amount of saltiness. This bonito comes from the Bay of Biscay, north Spain. Right after the caught, the bonito is handily and carefully prepared: washed, boiled, filleted and preserved. Don Bocarte bonito is always prepared with fresh loins from big bonitos, following the artisanal tradition.
Don Bocarte uses only bonito (white-meat tuna) from the Bay of Biscay. It is prepared using fresh never frozen fish. Medium-to-large bonitos, just the right amount of salt, a meticulous jarring process… these are some of the characteristics that lead to a distinctive, juicy, and delicate product. The tuna slices in this jar are thin, bite-size pieces of fish.
