Fabulous Canadian vinegar, Minus 8 is so-named for the icy temperatures during which the grapes are harvested. The vinegar starts as “ice wine”, made from a secret blend of 8 varieties of red and white grapes, picked at -8 degrees Celsius in the Niagara region of Ontario. The wines are aged in French oak barrels, and the vinegar process follows the complex Solera system. Minus 8 develops concentrated and complex flavors, deep sweetness and a great balance of acidity. Richly flavored and utterly luxurious, Minus 8 is perfect with venison, foie gras, deglazed in a sauce, vegetables and other savory dishes.

Minus 8 is vinegar named for the temperature at which our premium grapes are harvested and pressed to make ice-wine.  The delicious, sweet wine is transformed into vinegar.

Small batch agricultural products like Minus 8 are subject to slight variations due to the changing character of the vintage each year. Minus 8 is barrel aged for years in an 18 year old French oak Solera system (started in 1997). According to his taste, the vinegar master blends vinegars from many oak barrels – selecting by vintage as well as by variety of grape – to make the bottled elixir “Minus 8.”

Tasting Notes

Appearance: Deep dark amber color

Density: Quite thick, concentrated and viscous; it flows down the glass with a thick coating

Aromas: Very complex, quite aromatic, with a forward notes of ripe tropical fruit, apple butter, Asian spice, a combination of dried and baked/stewed fruit (a mixed bag), vanilla, sandalwood/cedar, cocoa powder and nuances of toasted nut, madeira and cream sherry.

Palate: Sweet, rich, concentrated flavors follow its aromatic profile, with additions of caramel, prune, plum, cooked sweet tree fruit; finish is amazingly long and persistent.
